Tips:
Use unsalted butter. You can control the level of salt as necessary. 

Quick buttermilk: measure 1 T. of white vinegar into a measuring cup and fill with milk to the 1 c. line. Let stand for 10 minutes.

Cooking Meat:

Level of Doneness Cook Until After Resting
Rare 115-120 degrees 125 degrees
Medium-Rare 120-125 degrees 130 degrees
Medium 130-135 degrees 140 degrees
Medium-Well 140-145 degrees 150 degrees
Well-Done 150-155 degrees 160 degrees
